A very special release to celebrate the birth of baby Cooper, the third generation of the Brown cheese family.
Inspired by Ceridwen's love of ashed goat's cheese (see the cheese named after her) and Matt's preference for a harder cow's cheese, Cooper is the best of both. Cheesemaker Cameron created ash from local grapevines and allowed this to trickle through the curds in the centre of the cheese, resulting in a lovely marbled effect. Similar in style to Morbier, the cheese is semi-hard, with creamy texture, fresh acidic tones and a hint of smooth caramel aftertaste. It is a great table cheese, but also melts and cooks well.
Cow’s milk, non-animal rennet, cultures and salt.
