Pickled walnuts are an old English favourite only now being re-discovered by today's chefs. The young, green walnut fruits are pickled in sweet vinegar and spice mix in the King Valley Walnuts farm kitchen. They're great as an antipasto or with a chunk of Milawa Cheddar on a lavosh cracker. You can also use the spiced vinegar for a salad dressing base or to add a special flavour to a beef casserole.
